Three-Bean Vegetarian Chili
1 tablespoon vegetable oil
1 medium brown onion, diced
1 clove garlic, minced
1 tablespoon chili powder
1 28-ounce can crushed tomatoes
1 16-ounce can diced tomatoes
1 15.5-ounce can red kidney beans, drained and rinsed
1 15.5-ounce can black beans, drained and rinsed
1 15.5-ounce can white beans, drained and rinsed
1 4-ounce can chopped green chilies, drained
½ teaspoon salt
Dash of hot sauce
Add oil, onion, garlic, and chili powder into a large pot and cook over medium heat, stirring occasionally, for 5 minutes. Stir in tomatoes, beans, green chilies, salt, and hot sauce. Bring to a boil and then reduce heat to low. Cover and simmer, stirring occasionally, for 20 minutes. Serve hot in football bread bowl for the Super Bowl!
