National Eggs Benedict Day is fast approaching. April 16 is the day designated to celebrate this breakfast menu staple. Most restaurants with breakfast service offer the traditional recipe – bread, ham or bacon, poached eggs and Hollandaise sauce. But some chefs get creative and offer up a more imaginative version.

M Cafe offers up two versions of the Benedict. Both feature steamed kale and tomato and are served with a soy Hollandaise over a whole grain baguette. Choose the Vegan Benedict with tempeh bacon ($10.25) or the Scottish Smoked Samon ($11.25).
Napa Valley Grille
There are several versions of this egg-y treat on the weekend brunch menu at Napa Valley Grille but the stand out is the Buttermilk Pancake Benedict with maple sausage, poached egg and Hollandaise over buttermilk silver dollar pancakes. ($5.75 for small plate)
Ray's and Stark Bar
Not a breakfast person? Ray’s and Stark Bar at LACMA offer a delicious Benedict Burger ($19). A sunny side up egg, watercress, Gruyere, Red Onion Confit and Bearnaise Sauce on a housemade Brioche Bun make this the perfect lunch or dinner choice on National Eggs Benedict Day.
Public Kitchen and Bar
Much like the hotel itself, the weekend brunch menu at Public Kitchen and Bar features some updated takes on the classic including a Chorizo Benedict and a Duck Confit Hash Benedict.
Petrossian Boutique and Cafe
Live the luxe LA lifestyle with the fancy Eggs Benedict with Smoked Salmon and Caviar ($28). This extravagant dish includes Black Forest Ham, smoked Salmon, poached eggs, Royal Transmontonus Caviar and Hollandaise Sauce on a classic English Muffin.

Break of Dawn Restaurant
While this recipe still contains the basic elements of poached eggs and smoked ham, it is served on grilled potato bread with an Asian Pesto Hollandaise. ($11)
Plum's Cafe
Plum’s Cafe’s Santa Fe Eggs Benedict offers a spicy option that includes poached eggs over peppered ham and fresh baguette with a Chipotle-Cilantro Hollandaise. ($15)
