Foodie Friday: Water Grill

STUDIO CITY (CBSLA.com) — Enjoy the freshest fish of the season, Alaskan Halibut, right now at the Water Grill!

Chef Damon Gordon, executive chef from Water Grill in Santa Monica, visited CBS2 This Morning Friday to talk about the tasty specials being offered at the restaurant this spring.

Alaskan Halibut is a fish known for its delicate, sweet flavor, white color and firm, flaky meat.

Recipe: Wild Alaskan Halibut with Mexican Corn

Ingredients

4 8oz portions Alaskan Halibut
2 whole corn cobs
1 Jalapeno Sliced
1 clove chopped garlic
½ cup crumbled Cotija Cheese
1 Lime
1/8th bunch Cilantro
4 tbsp blended oil
Salt and pepper

Directions:

Grill the corn in the husk for 30 minutes turning constantly and also allowing the corn to lightly brown. Once cooked remove the husk and cut the kernels off the corn and set aside.

Heat half the oil in a frying pan and place in the halibut portions. Allow the fish to get a golden color and then cook in the oven for 6-7 minutes.

Heat the remaining oil in a deep side frying pan. Over a moderate heat add the garlic, season with salt and pepper and cook the garlic with no color for 1 minute. Then add the jalapeno and the corn, cook for another 2 minutes. Check the seasoning then remove from the heat and add the Cotija cheese and the lime juice. Distribute between 4 plates, top with the halibut and garnish with the cilantro.
