STUDIO CITY (CBSLA.com) — Cheers to cupcakes!

Tiffini Soforenko of Yummy Cupcakes visited the KCAL9 studios Tuesday to share their new cocktail cupcakes!

Yummy Cupcakes is a Los Angeles-based gourmet cupcake bakeshop that offers an extensive line of cupcakes and specialty cupcake treats.

The new cocktail cupcakes include three new flavors:

  • Mudslide – Coffee infused chocolate cupcake baked with a “shot” of Irish Cream, centered with whipped cream, frosted with a coffee buttercream, sprinkled with chocolate cookie crumble
  • Maker’s Mark® Bourbon Apple Pie – Spiced cupcake studded with Maker’s Mark whiskey soaked fresh apples, frosted with an apple buttercream
  • Spiked Lemon Tart Bar – Lemon cupcake baked with a shot of vodka on a buttery graham cracker base, filled with vodka spiked fresh lemon curd, frosted with a spiked tart lemon buttercream, topped with crushed graham crackers

Lemon Tart Bar Buttercream

1/2 lb soft unsalted butter
7 C powdered sugar
1/2 C lemon juice
1/2 TBL plus 1/2 tsp lemon extract
1 TBL Vodka
1/4 tsp salt

Soften butter
Put in mixer bowl
Cream butter
Add 4 cups powdered sugar
Add ½ of the liquid
Cream all together
Gradually add in the remaining powdered sugar,
one cup at a time , alternating with the remaining liquid
Add salt

Buttercream is done if you get soft peaks.

Do not add any milk.

Lemon Tart Bar Cupcakes

1/2 lb unsalted butter
2 C sugar
4 eggs
1 TBS Vodka
1/8 C lemon juice
2 2/3 C all purpose flour
3/4 tsp salt
1 1/8 tsp baking powder
1 tsp lemon extract
1 TBL lemon zest

Cream butter and sugar and eggs
Add eggs
Scrape down sides of bowl
Combine dry ingredients
Add dry ingredients and liquids in thirds

Stir in lemon zest

Scoop onto a graham cracker crumb base (see recipe)
