Redlands Creamery Puts New Spin On Classic Summertime Treat

REDLANDS (CBSLA.com) — A Redlands creamery is putting a new spin on a classic summertime treat with liquid nitrogen ice cream.

Fans say the sweet confection at "à la minute" on Citrus Avenue is the freshest ice cream they've ever had.

Each scoop is made to order and ready in about a minute. Every batch billows with smoke as liquid nitrogen is added to an organic custard base.

"We're literally pouring that negative 321-degree liquid into our product and as it mixes, it incorporates air just like traditional ice cream but instead of it taking 15 to 20 minutes to freeze, it takes about a minute to a minute and 30-seconds," said "a la minute" Owner Ryan Berk.

From orange honey to olive oil vanilla bean, the creamery serves eight flavors of the delectable treat, along with a secret menu.

Berk says the liquid nitrogen process eliminates ice crystals. In addition, the ingredients are all sourced locally. But the cream comes from an organic dairy in Northern California that has its cows sleeping on memory foam.

Berk plans to open another two shops in the area to satisfy the city's sweet tooth.
