An American favorite breakfast and brunch dish, eggs Benedict is traditionally made of an English muffin, which is toasted and split. Saturday breakfast at EATS gives patrons the opportunity to order southwestern eggs Benedict, which starts with the English muffin base topped with chorizo, poached egg, avocado and a smoky chipotle Hollandaise sauce. On Sunday, guests can enjoy a portobello Benedict for brunch. This version is created with a portobello mushroom, poached egg, prosciutto, roasted tomatoes, mizuna (Japanese mustard leaf) and the showstopper of the entrée, a silky Bearnaise sauce, which tops this creation.
