Bone-In Prime Rib of Beef

Seasoning rub:
8T kosher salt
2T freshly ground black pepper
1T olive oil
1T minced rosemary

Aromatics:
2 sprigs fresh rosemary
1⁄2 cup chopped garlic
1 carrot, large dice
1 yellow onion, large dice
1 celery stalk, large dice
2 Roma tomatoes, large dice
6 whole garlic cloves
1 cup red wine
3 cups fresh low-sodium beef stock
Salt and pepper to taste

Pre Heat oven to 300 degrees

Season all sides of roast with salt and pepper.
In heavy-bottom roasting pan, brown top and ends of roast.
Rub chopped rosemary on top and sides of roast.

Place the roast fat-side-up on vegetables and aromatics, add wine and stock. Place roast in preheated oven and roast until internal temperature reaches 120 degrees, about four hours. Let rest for 20 minutes and serve.
