Lisa Leonard, DIY Designer, stopped by KCAL9 Monday to give viewers tips on how to host the perfect picnic with some yummy fresh foods.
Here are some recipes she shared:
Tropical Fros-Tea
Ingredients
- 1½ cups Julia's Tropical Tea
- 1½ cups fresh or frozen mango
Instructions
- Blend until smooth. Fill into popsicle molds and freeze.
- Enjoy!
Quinoa Vegetable salad
Ingredients
2 cups quinoa (prepared according to package)
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow onion, diced
1 green squash, sliced
1 yellow squash sliced
1/2 C crumbled feta cheese
3/4 C Balsamic vinaigrette dressing
Salt and pepper
Instructions
Prepare quinoa and set aside. Sautée all vegetables in olive oil until tender. Combine quinoa, vegetables and balsamic vinaigrette dressing in large bowl and chill overnight. Add feta cheese and salad and pepper to taste. Serve cold.
4-6 servings
The Perfect (Easy) Summer Sangria
1 bottle sangria (mangria is a good brand) chilled
1 liter Lemon lime soda chilled
10 Strawberries, cut in half
2 limes, cut into quarters
15 mint sprigs
Mix all ingredients in large pitcher, serve chilled
