Loteria Grill Founder Shares 'Ham & Cheese Torta' Recipe
STUDIO CITY (KCAL9) — Founder and Executive Chef of Loteria Grill and Torta Company Jimmy Shaw stopped by KCAL9 Thursday to tell viewers about his new restaurants and how to make a ham and cheese torta.
The fifth location of Loteria Grill opened in December at FIGat7th shopping complex in the Financial District. Next to the restaurant, Shaw debuted his new restaurant Torta Co., a Loteria concept for Mexican sandwiches.
Ham and Cheese Torta Recipe:
Ingredients:
1 Freshly baked Telera Roll or substitute a crispy, French Baguette of 7" in length, cut horizontally. Remove some dough from the top half of Roll
1/2 tbsp of Butter
4 oz of Ham
2 tbsp of Refried or Mashed Black Beans
1 1/2 oz of White Cheddar Cheese
5 thin slices of Fresh Roma tomato
Thin Poached White Onion Slices to taste
1/2 tbsp of Chipotle Mayo
5 Slices of Fresh Avocado
Prep:
Preheat a non-stick griddle to 350 Degrees
Apply butter on inside of both halves of roll, place on griddle facing down
Slide bread to the side and place ham on buttered griddle
Apply black beans to bottom half of roll, return to griddle facing down to heat beans
Flip ham over
Flip bottom half of roll and add warm ham. Add cheese
Spread Chipotle Mayo on inside of top half and place on griddle facing down
Place tomato and sliced onion evenly over cheese
Mash the sliced avocado to the inside of the top half of the roll
Close the sandwich, squeeze slightly and carefully flip over to toast on top of the roll for 20-30 seconds
Remove from griddle, cut in half and serve
