Jessica Luengo Shares Cinco De Mayo Recipes Couples Can Make Together

STUDIO CITY (CBS) — Celebrity pilates trainer and author Jessica Luengo visited KCAL9 Wednesday to share Cinco de Mayo recipes couples can make together.

Jessica prepared the following recipes from her new cookbook, Cooking Healthy Together:

Turkey Taco Lettuce Cups

When we're craving tacos but not all the heaviness that comes along with it we make these! By slow-cooking the turkey you get flavorful and juicy ground meat without all the fat and calories you get from beef. The lettuce cups give the tacos an extra crunch and lighter taste so you don't even miss the tortilla!

Serves 2

Ingredients:

1⁄2 lb. organic 97-99% lean ground turkey
1 tablespoon olive oil
2 garlic cloves, chopped
1⁄2 white onion, chopped
1 jalapeño, chopped (include seeds for more heat, omit if you prefer less spicy)
1⁄2 tablespoon chili powder
1 tablespoon cumin
1⁄4 teaspoon sea salt
1⁄4 teaspoon ground pepper
1⁄4 teaspoon red pepper chili flakes
1 tablespoon chopped cilantro
1 head butter lettuce or iceberg, leaves de-stemmed & washed well
1⁄2 cup pepper jack cheese
1 avocado, mashed, or Chunky Guacamole (see recipe)

Cooking Directions:

1. In large skillet over medium heat, sauté olive oil, garlic, onion and jalapeño until fragrant, about 1 minute.

2. Add ground turkey, chili powder, cumin, sea salt, pepper and red pepper chili flakes; stir well to combine.

3. Turn heat down to low and cover; simmer for 15 minutes, stirring and breaking up the turkey into tiny little chunks as it's cooking.

4. After 15 minutes, remove pan from heat and stir in chopped cilantro.

5. Transfer turkey and juices to a serving bowl; serve with lettuce cups, pepper jack cheese, and mashed avocado (or Chunky Guacamole).

Chunky Guacamole

Can't think of anything we crave more with our Fresh Lime Margaritas than this Chunky Guacamole! We like our guacamole to have some texture to it, but if you prefer yours to have a smoother consistency just smash the avocados more.

Serves 2-4

Ingredients:

2 overripe avocados (should be very soft, but not too mushy, when you press on the skin)
5 organic cherry tomatoes, halved
1⁄4 cup red onion, chopped
1 jalapeño, chopped (include seeds for more heat, omit if you prefer less spicy)
1⁄2 fresh lime, juiced
1 garlic clove, chopped
1 tablespoon fresh cilantro, chopped
1⁄2 teaspoon fresh ground pepper
A pinch of sea salt
tortilla chips
jicama wedges
carrot sticks

How to Make:

1. In a small bowl, mash avocados with fork to chunky consistency (making sure you don't over-mash). Add tomatoes, red onion and jalapeño.

2. Add lime juice, garlic, cilantro, pepper and a pinch of sea salt; stir to combine.

3. Serve with tortilla chips, jicama wedges and carrot sticks for dipping.

Fresh Lime Margaritas

 My husband is a HUGE tequila fan, so sometimes I'll surprise him with a new bottle to try on a night when we're making our Spicy Grilled Fish Tacos and Chunky Guacamole! These margaritas have been madeover healthy with a ton of fresh lime juice and hardly any sugar.

 Serves 2

Ingredients:

1⁄2 cup (3 oz.) premium Blanco tequila
juice of 2 1⁄2 limes
1 teaspoon agave nectar
2 lime wedges
crushed ice
cocktail shaker
margarita glasses

How to Make:

1. In a cocktail shaker, combine tequila, lime juice, agave nectar and crushed ice.

2. Hold top and shake well for at least 15 seconds.

3. Fill margarita glasses with crushed ice.

4. Pour margaritas slowly from shaker into each glass.

5. Garnish with lime wedge.

 *According to taste or preference, you may add or omit as much agave nectar as you like. For example, if you want a sugar-free margarita, omit agave nectar altogether and add a splash of club soda to taste.
