Handmade Holidays: No Guilt Healthy Chocolate Truffles

STUDIO CITY (CBS) — Are you craving holiday treats but don't want the added calories? Our own Evelyn Taft went into the kitchen at COOK LA to make tasty "guilt-free" truffles.

No Guilt Healthy Chocolate Truffles

Serving Size: 25-30 truffles

10 large Medjool dates pitted (or similar), soaked in water
1 1⁄2 cup walnuts, unsoaked
1/3 cup raw cacao powder
1⁄2 tablespoon vanilla extract (optional)
pinch of salt
1 Tbsp. agave nectar
2 teaspoons water if mixture needs moisture.
1/2 cup of shredded coconut for rolling the truffles and/or...
1/2 cup of chopped nuts for rolling the truffles (peanuts, hazelnuts, walnuts, pick your favorite!)

Directions:

Chop 1⁄4 cup walnuts and set aside to roll truffles in. Place remaining walnuts and the salt in a food processor fitted with S blade. Process until finely ground. Add the dates and process until mixture sticks together. Add the cocoa powder and optional vanilla and agave until evenly distributed. Add the water, if using and process briefly.

Transfer into a mixing bowl. Roll mixture into small balls and roll again coating with either walnuts, shredded coconut, or cocoa powder. Refrigerate for a couple of hours, enjoy chilled or at room temperature!
