Go Gluten-Free For Your Holiday Meal
STUDIO CITY (CBS) — Are you looking for a great gluten-free dish for your holiday meal? Pam McDonald, of MacD's Gluten Free Market, and Chef Eddy Rocq stopped by KCAL9 Tuesday to share a special dish that is sure to please!
Turkey Roulade:
Serves 10 to 15 guests
1 turkey breast
4 large tomatoes
1 garlic clove chopped
2 Stems fresh tarragon
2 Turkey bacon strips
¼ of an onion
4 oz mini gluten free croutons
Preparation of the stuffing: Peel, clean, dice tomatoes and onions into half inch size.
Sauté with olive oil salt and pepper, cook until most of the liquid evaporates. Add chicken broth, evaporate half way. Add croutons and cook until the liquid has been absorbed completely. Add the fresh chopped herbs and garlic, let the stuffing cool down in the refrigerator.
Preparation for the turkey breast: Place turkey breast half between 2 sheets of plastic wrap. With meat tenderizer, pound each breast to 1/8-inch thickness. Place stuffing along middle of the meat. Using plastic wrap, tightly roll up turkey lengthwise, tucking in the ends to enclose the filling. Secure seams with wooden toothpicks. Poached in boiling water for 5 min and bake 8 minutes or until cooked all the way. You may sprinkle fresh herbs on top of the baked roulade, cut and serve.
