Erin Walgamuth Demonstrates Tasty Gluten Free Cooking Ideas

STUDIO CITY (CBS) — Erin Walgamuth visited the KCAL 9 studios Monday to share gluten free cooking tips with viewers.

Walgamuth, who is gluten intolerant, demonstrated her gluten free brownie recipe on the show. She is currently writing a cookbook of gluten free recipes that in her words, don't "taste like cardboard."

Gluten Free Chocolate Brownies

Pre-heat oven to 350 degrees

Butter bottom only of an 8 x 8 in. metal baking pan

Ingredients:
6 oz. dark chocolate coarsely chopped
½ cup butter
2 large eggs
1 cup firmly packed dark brown sugar
1 tbls. Gluten free vanilla extract
¾ cup finely ground gluten free almond meal
¼ cup superfine gluten free white rice flour
¼ teaspoon baking soda

In a small saucepan melt butter and chocolate on low heat. When butter and chocolate are mostly melted, remove the pan from the heat and whisk until smooth, set aside.

In a large mixing bowl combine almond meal, rice flour and baking soda and whisk until well incorporated, set aside.

In a medium mixing bowl whisk together the sugar, eggs and vanilla until well combined.

Whisk a small amount of the melted chocolate into the sugar and egg mixture. Gradually whisk in the remainder of the melted chocolate until well combined.

Pout the chocolate mixture into the flour mixture and combine well with a rubber spatula.

Pour brownie batter into the greased metal pan and put in the pre-heated oven.

Cook for 20 minutes or until a cake tester comes out clean when inserted into the middle of the brownies. Let brownies cool completely before cutting.
