Top Chef's Fabio Viviani Goes Green For Earth Day

STUDIO CITY (KCAL9) — Listen up, Top Chef foodies! Fan favorite Chef Fabio Viviani stopped by KCAL9 Tuesday to discuss how to be green in the kitchen. His "go green" recipes are perfect for any Earth Day celebration!

Viviani moved to Ventura County, California at the age of 27 and now works as the owner and executive chef of Cafe Firenze in Ventura Country and Osteria Firenze in Los Angeles.

He also has published two cookbooks, including "The Cafe Firenze Cookbook" and an e-book called "Did I Really Make Breakfast." 

Fabio's Basic Crepes:

Ingredients:

1 cup of sifted Flour
½ Tsp of Salt
3 Eggs beaten
2 Tbsp of melted Butter
1 Cup of Milk

Directions:

1. Starting from the dry ingredient mix everything together in a mixer, until the eggs start to whip and get to a whiter color

2. Heat a non stick pan over a medium fire, you can brush with extra butter if you like

3. Pour about 4 Tbsp of batter for each crepe in the pan

4. With your wrist make circular movement as you hold the pan in order to distribute the batter evenly onto it; cook the crepes until golden brown then flip them over
