The Rooster Cafe is a cozy little place not far from The Lab and The Camp in Costa Mesa. The grilled cheese here is pretty straightforward, and comes with cheddar and Swiss cheeses on sourdough bread. But, this sandwich shows how wonderful simplicity can be. The sandwich is grilled to a perfect golden brown, making the bread crisp and the cheese wonderfully gooey. For a little extra, you can make this sandwich even better by adding bacon.
