A popular Latin American seafood dish, ceviche is usually flaked fish or other seafood seasoned and cured with citrus. Depending on the country, ceviche is served with sweet potatoes, plantains or nuts. In Los Angeles, due largely to the Mexican influence, ceviche is served with chopped onions, cilantro and tortilla chips and eaten like salsa. But because the fish isn't actually cooked there is a risk, and eating bad fish can be a fate worth than death. As ceviche become more popular, you can increase your chances of getting the best and the freshest by checking out these restaurants that do it right.

There are many delicious items on the menu at Chichen Itza Restaurant. For one the tacos are fabulous, and for another the pollo asado is also pretty great. But if you're looking for the perfect appetizer, the ceviche de pescado is the right way to start your meal. Made with fresh basa fish marinated in lime, it's served with with tomato, onion, cilantro and tortilla chips. The basa fish is light and firm and served at the perfect temperature.

Known for its raw bar, Cerveteca has a few ceviches and similarly prepared items that are out of this world. The traditional Mama's Ceviche of fresh whitefish, tomato, cilantro, onion, jicama, mango and cucumber is truly outstanding. The Yellowtail Ceviche served up with jalapeno, red onion, sprouts, sesame leaves and yuzu soy is a hit with customers looking for a slightly bolder flavor. The Peruvian Sashimi and Agua Chile are also a must-try.

If you find yourself in the Boyle Heights area then you have to look for Mariscos Jalisco's taco truck. Known best for their shrimp tacos, the ceviche de camaron is right up there. It's a delicious sensation featuring diced plump and tangy shrimp with cilantro, fresh onion and slices of avocado on a crunchy tostada. The food is reasonably priced and always delicious.

Located in the quaint city of Toluca Lake, the newly-opened Cascada has been a hit since day one. Owner and chef Alex Eusebio (Top Chef season five) delivers his signature “nuevo Latino cuisine” to high reviews. One of the menu favorites is the selection of ceviche. The leche de tigre (tai snapper) and the shrimp ceviche tostada (diced shrimp with an L.A. street fruit salad) are customer favorites. The yellowtail tiradito (yellowtail with avocado salsa) and salmon crudo (pineapple and ginger-lime syrup) are wonderful versions of ceviche as well.

If you're looking for cheap eats that will also fill you up then La Cevicheria is your place. Depending on where you're coming from it could be a bit of a trek into Arlington Heights, but the ceviche is completely worth it. The blood clam ceviche is bold with spice and flavor. The shrimp and octopus ceviche with onions, tomatoes, cilantro and lime over a crisp tostada is perfectly seasoned, and the camarón y pescado is a definite must-try.
