STUDIO CITY (KCAL9) — The Badmaash L.A. team stopped by KCAL9 Friday to show viewers how to get ready for Super Bowl Sunday Badmaash style!
Tandoori Spiced Chicken Wings
Five pounds chicken wings, tips removed, drumettes and flats separated
- Marinated in:
- Yogurt
- Ginger (micro chop)
- Garlic (micro chop)
- Serrano (micro chop)
- Lemon juice
- Dried fenugreek
- Salt
- Pepper
- Paprika
- Chili powder
- Cilantro (garnish)
- Cook:
- Preheat oven to 400 F
- Spread chicken wings on large baking sheets SINGLE LAYER - in middle rack of oven
- Bake until cooked through (20-25 mins) flipping once
- Remove, cool down
- Bake again at 375 F for (7-10 mins)
- Remove into a bowl, finish with lemon juice, cilantro & chaat masala
Masala Chips
Take your favorite plain tortilla chips and sprinkle with lime juice, sprinkle with salt, paprika and 'chaat masala' and toss.
Masala Cheesy Dip
- Ingredients:
- ½ cup milk
- 4 to 5 cups grated cheddar (soft & strong)
- Roasted cumin seeds or roasted cumin seed powder
- Chopped red onion
- Chopped Serrano chili
- Chopped cilantro (with stems)
- Kosher salt (to taste)
- Cayenne pepper
- Paprika
- Cook:
- In a saucepan, add touch of oil; bloom cumin, sizzle garlic, sizzle Serrano
- Drop heat to medium
- Add milk and bring to heat, add dry spices & seasonings to taste
- Slowly add cheese and melt until consistent texture
- Remove from heat and add onion & cilantro
