'Kosher in the Kitch' Creates New Twist On Traditional Latkes

STUDIO CITY (CBSLA.com) — Celebrate the start of Hanukkah with some epic latke from food blogger Nina Safar!

Safar's "Kosher in the Kitch" blog features fun and exciting ways to eat traditional Jewish food.

Grilled Cheese Latkes 

Ingredients:
16 oz. shredded potatoes (about 3 1/2 cups)
2 eggs
2 T flour
2 scallions chopped up
Salt
Pepper
Sliced muenster cheese
Spicy Mayo for serving
Chopped Scallions for serving

Directions:
Combine potatoes, eggs, flour, scallions and season with salt & pepper. The flour helps bind the batter together. Add more if needed. Fry batter in batches. Once latkes are slightly golden brown on both sides, remove from pan. Place cooked latkes back in pan and layer a latke on top of another latke with sliced cheese in between. Once cheese has melted, serve with spicy mayo and chopped scallions. (spicy mayo is mayo with sriracha sauce combined)

Waffle Latkes

Ingredients:

4 cups shredded potatoes (1 lb)
1 small onion, chopped
2 eggs
3 T scallions, chopped
2 T flour
1 tsp salt
1/4 tsp. black pepper

Directions:
Combine waffle latkes and cook up in batches using a waffle maker (be sure to use a non-dairy waffle maker!) Plate cooked waffle latkes with baked chicken bites and hold together with a tooth pick. Drizzle maple syrup on top or serve with western sauce (combine equal parts ketchup, mayo and bbq sauce) or spicy mayo (mayo with sriracha)
