Salted Brings Culinary School Home For Less

STUDIO CITY (CBSLA.com) — Want to become a master chef?

Jeff Appelbaum and Chef Dave Danhi, founder of The Grilled Cheese Truck, visited the KCAL9 studios Monday to talk about Salted, an online cooking school.

Salted features 70 of the best chefs in the country and provides a way for home chefs of all skill levels to learn through beautiful video.

While accessible to home chefs of all skill levels, Salted aims to provide the same caliber of education at top tier offline culinary schools, but without the exorbitant costs, which often range in the tens and of thousands of dollars, and inconvenience.

Frosty the SnowMelt

Makes 8 Melts:

Ingredients:

16 slices Brioche or similar "sweet" bread
2 ½ cups holiday cheese mix (see recipe)
32 each ginger snap cookies, broken into quarters
2 ½ cups mini marshmallows, toasted (use your oven broiler or a torch)
1 cup white chocolate chips
Red and Green Sprinkles (optional)
8 servings of your favorite hot chocolate recipe

Holiday Cheese Mix
12oz softened cream cheese (not whipped)
3/4 cup "cookie butter" (available at specialty markets such as Trader Joe's)
2 teaspoon orange juice
1 teaspoon orange zest
½ teaspoon pumpkin pie spice
1 teaspoon vanilla extract

Place all ingredients into a mixer bowl (or a stainless steel bowl if you are going to use an electric hand mixer) and mix until smooth. Be sure to scrape down the sides of the bowl so as to completely incorporate all ingredients.

Assembly:
Spread each slice of bread evenly with 1 ½ tablespoons with the cheese mixture. On 8 of the slices assemble as follows:
• ¼ cup toasted marshmallows
• 1 oz white chocolate chips
• 4 each broken ginger snap cookies
Cover with other piece of bread, cheese side in and lightly press together.

Cooking:
This is a unique melt as no butter is used in the grilling. The sugar content of the bread helps it brown and keeps it crispy.
Heat griddle to about 400°F. Place all sandwiches on griddle until golden brown. Watch closely and rotate if needed as this can burn quickly because of the lack of butter. Once golden brown, gently flip and repeat until golden brown again.

Cut Melts on the diagonal and serve with your favorite hot chocolate for dipping! Also goes great with ice cream!
