Pie-Not: OC's First And Only Australian Bakery

STUDIO CITY (CBSLA.com) — Orange County's first and only Australian bakery is open!

The owners of Pie-Not visited the KCAL9 studios Tuesday to show off their fall menu and their bake-at-home pies.

They have recently expanded to offer their vegetarian offerings to Whole Foods across Orange County, and eventually LA.

Pie-Not, located in Costa Mesa, is also partnering with Amazon Fresh, so LA residents can order their pies and have them delivered fresh to their door – no traffic and so convenient!
"HIPPIE ROLL" by Pie-Not
(15-20 servings / rolls)

Ingredients:
1 tablespoon - Olive Oil
500 grams - Chopped Spinach (frozen)
100 grams - Walnuts (any type of nut works well)
500 grams - Ricotta Cheese
100 grams - Swiss Cheese
Salt & Pepper (to taste)
Herbs / Seasoning (add any herb or extra seasoning to make it your own)
3 sheets - Puff Pastry (store bought i.e. Pepperidge Farms)

Method:
1. Preheat oven to 375F fan forced or 400F convectional, please note that there can be slight variations between ovens.

2. Heat oil in a fry pan, add spinach and walnuts and season with salt and pepper (add any extra herbs seasoning) to taste and cook for 5 minutes.

3. Let cool in refrigerator for approx 30mins.

4. Add ricotta and swiss, mix thoroughly.

5. Place pastry sheets on a flat surface and cut in half.

6. Spoon or pipe spinach mixture along the length of each piece of puff pastry and brush water down the length of the other side and roll up, repeat with other sheets of pastry and mix.

7. Cut to preferred size. We prefer 5" long for a single serve but can be cut smaller for bite / party size.

8. Place on a baking tray / sheet with seam side down. Score top of roll with a knife, 2-3 slits on each roll to allow steam to escape.

9. Place in oven and bake for 20mins or until golden brown.
