Chef Vernon Cardenas from State Social House stopped by KCAL9 Thursday to show viewers great crowd-pleasing snacks for March Madness parties.

Guacamole Sliders Recipe:

1 lb. ground chuck beef

1 lb. ground short rib beef

¼ cup pickled jalapeno (can be purchased at local grocery store)

3 slices cheddar (sharp or medium sharp)

For guacamole:

1 each avocado

1 tbsp chopped jalapeno

1 tsp small diced white onion

1 tsp lime juice

1 tsp fine minced garlic

1 tbsp chopped cilantro

For jalapeno aioli:

1 each smoked chipotle jalapeno (chopped fine)

1 cup mayonnaise (mix with chopped chipotle)

1 tsp lemon juice (for chipotle aioli)

Preparation:

Blend beef and form into six 2-oz mini patties. Preheat griddle/grill to medium high heat and season patties with salt and fresh cracked black pepper. Place burger on griddle and smash thin. Place buns on griddled to toast slightly. Flip burger and finish to desired temperature. Add ½ of the sliced cheese to eat burger patty and wait until melted. Mix items from line 3-7 in a small mixing bowl (and season with salt and pepper). Place patties on toasted buns and add guacamole, jalapenos and jalapeno aioli and enjoy!

Steakhouse Sliders Recipe:

1 lb. ground chuck beef

1 lb. ground short rib beef

3 slices cheddar cheese (sharp to medium sharp)

6 each mini hamburger/slider buns (King’s Hawaiian bread works if slider buns are not available)

6 each dill pickle chips

To taste: Ketchup, mustard, salt and fresh cracked pepper

6 tbsp diced sautéed onions

Preparation:

Blend beef and form into six 2-oz. mini patties. Preheat griddle/grill to medium high heat and season patties with salt and fresh cracked black pepper. Place burger on griddle and smash thin. Place buns on griddle to toast slightly. Flip burger and finish to desired temperature. Add ½ of the sliced cheese to each burger and wait until melted. Place a little grilled onion on each patty and place patty on toasted buns. Finally, add desired amount of ketchup and mustard before enjoying the premium mini sliders!
