STUDIO CITY (CBSLA.com) — Author and Health Food Advocate Molly Shattuck visited the KCAL9 studios Thursday to talk about her new book, “Vibrant Living”.

Molly is on a mission to get people healthy and to reduce the risk of heart disease and diabetes while still enjoying the foods you love.

Vibrant Living provides a back-to-the-basics approach to better health and better habits through a 21-day program.


Egg Spinach Cheese:
*Egg, spinach, cheese and avocado. Whisk together 1 egg with a splash of milk in a cereal bowl sprayed with extra virgin olive oil and bake in microwave for 45 seconds. Sprinkle a few chunks of cheese on top and cook 10 more seconds. Serve over bed of fresh spinach with a few chunks of avocado and any other veggies.

Bean Salad:
Rinse, drain, and mix any combination of beans such as black, cannellini, chickpeas with 1 chopped red bell pepper. 1 Tbsp. fresh dill.

Cherry Tomato, Basil and Feta Cheese Salad:
Ingredients for 4-6 servings:
4 cups red and yellow (if available) cherry tomatoes, cut in half lengthwise
½ cup scallions, minced
½ cup fresh basil, thinly sliced
2 Tbsp. extra virgin olive oil
1 Tbsp. balsamic vinegar
¾ cup 9about ½ pound) feta cheese, crumbled
Dash of salt
Dash of pepper
Directions: In a small bowl, whisk together olive oil, vinegar, salt and pepper. Combine tomatoes, scallions, and basil in a large bowl, toss with olive oil mixture and top with crumbled cheese.
