STUDIO CITY (CBSLA.com) — Corner Bakery now has all the taste with the fraction of the calories!
Corner Bakery’s Kristi Smith visited the KCAL9 studios Wednesday to talk about the chain’s new low calorie menu. She also showed viewers how to make their Chicken Pesto Sandwich.
The sandwich and Corner Bakery’s Roasted Tomato Basil soup has only 540 calories, even with the bread, mayo and croutons in the soup! Its just one of their more than 100 Corner Combos with fewer than 600 calories.
Chicken Pesto Sandwich
• Ciabatta ficelle
• Pesto mayo
• Roasted Chicken Breast, sliced
• Roma tomatoes
• Vinaigrette dressing
• Salt and pepper
Slice the bread lengthwise and spread the pesto mayo on the bottom slice, completely covering the bread. Cover the bottom piece of bread with half an ounce of fresh arugula. Layer four ounces of sliced chicken breast on the arugula and top with six slices of ripe Roma tomatoes. Sprinkle with salt and pepper and lightly drizzle our sweet and spicy house vinaigrette dressing. Place the top of the bread on the sandwich and cut in half to serve.
Plate half the sandwich with a cup of vegetarian Roasted Tomato Basil Soup, with pieces of tomato, garlic and basil, topped with homemade Spicy Croutons.
