Make Exotic Indian Cuisine Right In Your Own Kitchen With Tips From Exec. Chef Alfred Prasad

STUDIO CITY (CBSLA.com) — Have you ever wanted to make exotic Indian cuisine right in your own kitchen?

Well 10-time Michelin starred chef, Alfred Prasad, stopped by KCAL9 Tuesday to discuss visiting Tamarind of London in Newport Beach during September.

Tamarind of London is the sister restaurant to the London-based restaurant, Tamarind.

Chickpea Salad / Channa Chaat Recipe:

Spiced chickpeas with wheat crisps, mint & tamarind chutneys and sweetened yoghurt topped with blueberries. A delightful version of a popular Indian roadside snack with each mouthful providing an explosion of flavors and textures.

Ingredients: (Serves 4)

100g readymade wheat crisps

240g canned chickpeas

1 red onion

1 green chilli

1 teaspoon cumin powder

¼ teaspoon red chilli powder

½ teaspoon chaat masala

1 lemon

2 tablespoons mint chutney

2 tablespoons tamarind chutney

400ml natural yoghurt

2 tablespoons icing sugar

1 punnet blueberries

Salt to taste

Method:

Whisk the icing sugar into the yoghurt and leave aside.

Chop the onion and green chillies and mix with drained chickpeas along with the spice powders, salt and lemon juice.

Transfer the spiced chickpeas into serving bowls, add the mint chutney and wheat crisps, spoon the sweetened yoghurt over the mixture, drizzle with tamarind chutney and finish with a sprinkling of blueberries.
