Corned Beef Sandwiches With A Twist From Chef Lachlan Sands!

STUDIO CITY (CBS) — Nothing says Happy St. Patrick's Day like the ultimate Corned Beef Sandwich!

Chef Lachlan Sands of Le Cordon Bleu College of Culinary Arts stopped by the KCAL9 studios Thursday to create three varieties of the famous plate.

Classic Reuben
Ingredients:
• Light rye or marble rye bread
• Swiss cheese
• Thousand Island dressing
• Corned beef, thinly sliced
• Sauerkraut, drained
• 4 tablespoons butter, room temperature
Directions
1. Heat a large skillet or a griddle on medium-low heat.
2. Build each sandwich in the following order on the bread: one slice Swiss cheese, dressing, corned beef, sauerkraut and the second slice of Swiss cheese. Top with remaining bread slice, butter each top.
3. Place each sandwich, buttered side down, in the skillet or griddle. Grill sandwiches until both sides are golden brown, about 5 minutes per side. Cut in half and serve immediately.

Modern Ruben
Ingredients:
• Your favorite small roll or slider bun
• Kimchi (spicy)
• Sambal Olek
• Mayo
• Corned beef, thinly sliced
Directions
1. Slice the roll in half and grill or broil the cut sides until golden brown.
2. Mix the mayo with a little of the Sambal Olek to your taste
3. Build with corn beef, kimchi and a dollop of spicy mayo
4. Enjoy!

Low Fat Ruben
Ingredients
• Flax seed bread or a Sandwich thin
• Turkey pastrami or beef pastrami
• Low-fat Thousand Island Dressing (you prepare)
1/3 cup Greek yogurt
2 Tbls ketchup
2 Tbls Lemon juice
2 Tbls red bell pepper
1 Tbls minced onion
1 Tbls pickle relish
Pinch of cayenne
¼ cup water
• Low-fat Swiss cheese
• Butter substitute
Directions:
1. Prep the dressing: In a blender blend all ingredients and add salt to taste until smooth. You may add up to 2 tablespoons of additional water, if necessary.
2. Place one piece of bread on the counter. Butter the bottom side with butter substitute and stack with the pastrami.
3. Spread the dressing on the bread, and add the cheese and top with a slice of bread that has also been buttered with the substitute. Place in a pan and cook until browned on both sides.
4. Enjoy your low fat sandwich!
