Learn How To Prepare An Oscar Worthy Meal

STUDIO CITY (CBS/KCAL) — What would a night of glamorous stars, gorgeous dresses and gold statues be without award winning food?

Executive Chef of the Peninsula Beverly Hills, James Overbaugh, showed us how to prepare an Oscar party dish of Truffled Mac 'n Cheese in the KCAL 9 studios on Friday at noon.

The Peninsula Beverly Hills will be a hot spot over Oscar weekend with many of the nominees and presenters staying at the glamorous hotel.

Here is the recipe for Truffled Mac 'n Cheese:

(Serves 8 as an appetizer)

2 tbsp. Extra Virgin Olive Oil
4 tbsp. Unsalted Butter
1 lb (16 large torn pieces) Hen of the Woods Mushrooms (or other mushrooms)
2 tbsp. minced Shallots
1 tsp. minced Garlic
1 tbsp. chopped fresh Thyme
1 oz. thinly sliced Summer Truffles (optional)
½ cup White Wine
1 lb. small Macaroni noodles, cooked
1 tbsp. White Truffle Oil
2 cups Heavy Cream
1 cup Chicken Stock
1 cup finely grated Parmesan Cheese
Salt and freshly ground White Pepper
Chives and Parmesan to garnish

Heat a large skillet over medium heat. Add olive oil and unsalted butter. Gently sauté mushrooms until golden but not fully cooked. Season with salt and pepper. Add shallots and garlic. Sauté gently until translucent. Do not allow to brown.
Add truffles (optional), white wine and macaroni. Continue cooking until white wine 50% reduced and macaroni warm. Add white truffle oil, cream and chicken stock. Continue cooking until light sauce consistency attained. Toss in Parmesan and adjust seasoning.

Spoon into warmed deep plates or bowls. Garnish with chives and Parmesan cheese.
